Flame-seared red pepper & corn (with cilantro/lime yogurt)

You know it’s summertime when you are enjoying the smoky combination of peppers and fresh corn just off the cob. The lively flavor of the Cilantro/lime yogurt provides the perfect contrast to this side dish and BBQ favorite.  It’s a healthy and flavorful recipe that never gets boring!

 

Serves 4.

Ingredients

3 red bell peppers

2 ears corn

2 tbsps

Salt and Pepper to taste

 

Method:

  1. Use 1 tsp. of the extra-virgin olive oil to rub over the red peppers and corn. Place peppers over a gas flame or the grill, and sear using a pair of tongs to turn frequently until blackened on all sides. Repeat with the corn. Place the peppers in a bowl and cover with plastic wrap. Let cool.

 

 

Cilantro/lime yogurt:

1 cup yogurt

½ tsp. grated lime zest

1 tbsp. plus 1 tsp. coarsely chopped cilantro

Salt, to taste

 

Combine all ingredients.

 

SIDEBARS:

Searing the peppers not only gives a smoky flavor, but it makes them very easy to peel after resting in a covered bowl. Don’t feel you have to get every bit off.
