Zesty Celery Salad
Here’s a bright and zesty salad to help liven up your days in late autumn. The zing and crunch in this salad will perk you up and help get your back your mojo. It’s great with a simple broiled fish fillet and some brown rice.

8 celery stalks, sliced 1/4-thick on the bias
¾ cup flat-leaf parsley leaves
¼ cup pickled capers, plus 1 tbsp. caper liquid
¼ cup extra-virgin olive oil
1 tbsp. lemon juice
Coarse sea salt and coarsely ground black peppercorns, to taste
- Combine all ingredients and toss well. Check for seasonings and acidity. Adjust, if necessary.
